Eggs, Beautiful Eggs

Dozen eggs

Beautiful colored eggs

What can I say. The variety of colors makes these eggs the most beautiful eggs I have ever seen.

These are from our new egg lady. If you haven’t tried farm fresh eggs, please do. Find a neighbor, farmer, anyone with chickens and buy some eggs. Then compare store bought eggs to the farm eggs. Crack each into a small bowl and note the color. The farm eggs usually have larger and darker yolks, which to me, are richer tasting and better for you.

Eggs of many colors

Love these colors

Plus, you know how long they have been on the shelf. Question: in the old days we didn’t have to refrigerate eggs because the protective film on the outside of the shell was not washed off, so what about farm fresh eggs. We just cleaned the bad stuff off and set them in a cool, dry place. Remember egg baskets? They sat on a counter.

We have a coop of 6 hens and get eggs from them. Not all of them produce, because they are mostly pet birds, but we get enough to give to our neighbors.
Yes, the eggs are much better than the store bought ones. We noticed the yolks are darker and the shells are more firmer too.
