Purple Potatoes

Purple is one of my favorite colors, so why not grow purple food! The first purple food we planted was the All Blue Potatoes. Aren’t they pretty? They are called All Blue, but they look purple to me. They have excellent flavor and make interesting mashed potatoes, french fries and potatoe salad.

The tray below shows the potatoes after they are cut, waiting to grow eyes. We keep them in the dark for a while and then they grow eyes and are ready to plant. These babies are in the ground, along with the Yukon Golds. Last year, our potatoes tasted great, so we can’t wait for this years crop.

  1. That’s cool! We planted Russian Reds here back in January/February, and can’t wait to see how they turn out.
